Menu 4/22-4/26



Monday: MYOP, Fresh Veggies 
I buy Trader Joe's pizza dough and let the girls help me roll it out into personal pizzas.  We top it with store bought sauce and their pick of toppings: onions, peppers, pepperoni, canadian bacon, mozzarella, cheddar.  I put olive oil and garlic powder as a "sauce" on mine and top it with thin sliced onions, red peppers, cheddar, pepperoni and a sprinkle of salt and pepper.  Sliced fresh veggies for a side.

Tuesday: Crockpot Beef Stroganoff, Broccoli 
Trying something new...we'll see how it goes over.  They love pasta and the love beef, so it can't be that big of a risk, right?  Paired with broccoli.
 
Wednesday: Chicken/Bean/Cheese Enchiladas, Corn, Spanish Rice 
Ok, I just make these up as I go along.  I spray a casserole dish with Pam or the like, splash a little store bought enchilada sauce in the bottom then assemble the enchiladas:

I'll cook chicken and pull it, then cover it in some encha sauce over low heat and add some shredded cheddar.  Take a tortilla of your choice (I find the small ones work best for my kiddos) and fill with some refried black beans, a little chicken and a little more shredded cheese.  Place seam down in casserole dish.  Once dish is full, pour enchilada sauce to coat, sprinkle with more cheese and bake 350 till hot and bubbly.  I have one girl who doesn't like beans and another who likes very little cheese so I end up making 3 types, it's obnoxious, but I love them and I really want them to eat dinner so I do it anyway.  Lucy LOVES Spanish rice so we'll have that with a side of corn.

Thursday: Pulled Pork Sammies, Peas 
Every single time I ask the girls for dinner suggestions they shout out the same few things-one of which is always Pulled Pork...I'm not sure if it's because they love it or because they know how much I love it!  Either way, it's easy and delicious!

Menu 4/15-4/19


Monday: Parm Salmon, Tortellini w/Creamy Pesto, Green Beans
The girls loved this salmon when I made it the end of February.  I'll boil some store-bought tortellini and sauce it with this delicious creamy pesto that Amelia enjoys making.  Finish the plate with some green beans. 


Tuesday: Turkey Chili, Cornbread, Peppers 
Turkey Chili from the freezer, cornbread from a Jiffy box and fresh peppers.

I've never made this recipe (though I think I've posted it before) and to be honest, I still might not make it.  I'm going to be looking at Whole30/Paleo stew recipes to see if I can find one that the girls will like and I might be able to eat as well.

Menu 4/8-4/12



This was on the menu last week but it got pushed to this week as the girls had a band concert one night so we ate out.  I've never made the dill carrots but since we hardly ever eat carrots at dinner I thought I'd give them a try. 

Tuesday: Crock Pot Lasagna, Bread, Broccoli 
The old stand by.  I'll pull some meaty sauce out of the freezer the night before so I can assemble the lasagna in the morning and get it cookin'.  I take the girls swimming at their health club on Tuesdays and we are all starving by the time we get home.  The lasagna will be ready, the girls will set the table while the bread warms in the oven and I steam the broccoli.

Wednesday: Chicken Soup, Bread 
I have one container of chicken soup base in the freezer still so I'll pull it out the day before, toss it in the crockpot that afternoon with a little more chicken broth and throw some of the bread reserved from Tuesday's meal into the oven to warm when we get home.  I usually don't serve a veggie on the side since the soup is so full of them.

Thursday: Sausages, Mashers, Green Beans 
 The meat market in the neighborhood has Thuringer sausages the girls love, this is a fast and easy dinner for me so it works for Thursday since everyone is tired and cranky...including me.  Paired with some homemade mashers and steamed green beans.  Done and done!

Don't fear, I haven't completely forgotten to post my menus.  I've been focused this week on keeping my Whole30 blog up to date.  Check it out here for some meal ideas.

Menu 4/1-4/7

Tuesday: Dijon Chicken, Rosemary Red Potatoes, Broccoli 
Made this chicken on the fly once a few months back and it was amazing.  Girls have requested rosemary red potatoes and we'll toss some broccoli on the plate for some greenery!

Wednesday: Chicken Tacos, Peppers, Chips and Guac 
The usual chicken taco meal...using Frontera chicken sauce, and homemade guac by Lucy.

Thursday: Turkey Chili, Cornbread, Peppers 
 Turkey Chili from the freezer, cornbread from a Jiffy box and fresh peppers.

Menu 3/18-3/22

Monday: Breakfast
Trying something new...I love breakfast for dinner but not sure the girls are that "out of the box" at this stage of the game.  Growing up we would have breakfast burritos but since Pho can't have eggs unless its a baked item, that's out of the question.  I'll most likely do homemade waffles or pancakes with sausage or bacon and fresh fruit.

I'll be pulling sauce from the freezer, then assembling it in the morning.

 I'll make this recipe for "mini meatloaves" into burgers and shove them in a pita with tomato, lettuce and some of what Lucy calls "Zimbabwe Sauce" also known as Tzatziki...I make the burgers on my Foreman Grill because I'm not about to touch my bosses charcoal grill...it's a little too fancy/expensive for me to use.

Menu 3/11-3/15

Monday: Chicken Alfredo w/peas
I marinate some chicken breasts, cook and either pull or cube.  Then, I make a homemade alfredo sauce from Julia Child's béchamel, I usually make one and a half times the recipe.  To that I add a bunch of fresh grated parm, some garlic and when it's ready I mix it into the pasta (whichever shape the girls pick) and stir in the pulled or cubed chicken and some frozen peas.

My boss made stew a few weeks ago and I put the leftovers in the freezer, I'll pull it out and heat it in the crockpot, serve it up with some fresh bread and call it a night!

Thursday: Turkey Chili, Peppers/Corn, Corn Bread
Pulling one of two containers of Turkey Chili from the freezer, perfect for a quick dinner on a cold night!

Menu 3/4-3/8

Monday: Chicken Stir-fry w/Rice
Trying something new...we'll see how it goes over.  I'll just use whatever veggies I have on hand-there are always plenty to choose from, marinade some chicken and put it all over rice.

Tuesday: Pulled Pork Sammies, Corn/Peppers 
Every single time I ask the girls for dinner suggestions they shout out the same few things-one of which is always Pulled Pork...I'm not sure if it's because they love it or because they know how much I love it!  Either way, it's easy and delicious!

Wednesday: Dijon Chicken (CP) Broccoli, Baked Potato
I'll be pulling this from the freezer, I ended up not using it the last time it was on the menu. 

Thursday: Spaghetti, Green Beans, Bread
The girls no longer have swim team so we're home on Thursday nights now.  Mia has dance until 5 so everyone is starving by the time we get home.  I'll pull the meat/sauce from the freezer the day before and just heat that and boil noodles...easy peasy!

Menu 2/25-3/1

Monday: Stuffed Chicken Breasts, Broccoli, Bread
I STILL haven't made this...every time it's on the menu something happens...like the car breakdown so I can't get to the store...anyway, we'll see if this gets made or if something else prevents me from serving it!

Tuesday: Pork Chops, Corn Bread, Green Beans 
Again, Pork Chops from the freezer...I believe this is our last bag...but who knows, that freezer seem to hold endless amounts of things!  We all love cornbread (now that Pho can have it!!!) and easy peasy green beans!

Wednesday: CrockPot Lasagna
I will use the last spag/lasagna sauce mix from the freezer so assembly can happen quickly in the morning as I get the girls' lunches made and breakfast on the table!

Thursday: Dinner Out
We don't make it home after school on Thrusdays anymore because we don't have time after dance ends and swimming begins.  We'll be eating at Whole Foods, Epic Burger or Panera this night.

Menu 2/18-2/22

Monday: Thuringer Sausages w/Mashed Potatoes, Green Beans
Smoked thuringer sausages from the local meat market and two easy sides.  Perfect for a monday.

Tuesday: Chicken Tacos, Lucy-made Guac, Corn/Peas 
I'll use the Frontera Skillet Sauce over shredded or cubed chicken.  We make our tacos with small tortillas, refried black beans, chicken, cheese, avocado and tomato.  I'll heat up a mixture of frozen corn and peas to partner with Lucy's homemade guac and chips.

Wednesday: Chicken Soup, Cheddar Biscuits
I still have one huge container of Chicken Soup Base in the freezer from my "make ahead" day, I'll pull that, toss it in the crockpot, add a little more broth and let it heat.  Before serving I'll add some pasta (I've been using the "Cut Spaghetti" and the girls love it) and a cubed zucchini.  I'll make some cheddar biscuits and call it a night!

Thursday: Dinner Out

February 11th-15th

Pulling a bag of sauced pork chops from the freezer to toss in the crockpot.  

Wednesday: Spaghetti* w/bread and Fresh Veggies
The girls had a day off school a few weeks ago and I restocked the freezer with spag/lasagna sauce, turkey chili and some breakfast burritos...I'll pull one of the containers of sauce the night before to thaw then just toss it with pasta.  

Thursday: Dinner Out
Phoebe's class play is this night so we'll eat out (we would anyway since we never make it home on Thursday nights before swimming).

***You might have noticed that I stopped adding the shopping list...I felt like it was just a little too much work, considering each of you has a different stock of food in your pantry, I figure with the recipes you can make your own list...I was dreading the menu posts because it became very tedious to sort out the grocery list...sorry!
